Sequoia's Sake

OUR SAKE

We set out to create a style of sake that is easy to drink and enjoy. Our sake is Junmai, this means we only use four simple ingredients: Water (from the glacier-carved Yosemite water-shed), Rice (grown in the Sacramento valley), heirloom Koji and native sake Yeast.

Our passion is expressed in our two flagship brands; Sequoia and Coastal. The Sequoia brand is the first “real-nama” made in California! The only local draft sake in the bay area! The Coastal brand is our pasteurized sake, making it easy for shipping and storing.

Sequoia Products

Sequoia is our signature brand. We set out to create a bold bright American style sake to fit the diverse American palate and ethic food culture. To that end we created Sequoia, an unpasteurized sake like none other.

  • 99% of all sake import from Japan is “HEAT” pasteurized.
  • Unpasteurized delivers a bigger / bolder flavor.
  • Unpasteurized is soft/smooth making it easier to drink.
  • Sequoia Sake is 100% all natural, brewed locally in San Francisco!
  • Brewed every 45 days to ensure our sake is always fresh!
  • All Sequoia Sake contains no sulfites, tannins and is gluten free.
Notes:
  • Sequoia Products should be respected like fresh food and must be kept refrigerated at all time. For this reason, Sequoia Products are not available for shipping through our Web Store. You can purchase them at our brewery during the public tasting hours or at restaurants and retail shops who carry Sequoia Products.
  • Being kept in a refrigerator unopened, Sequoia Products will maintain its big bold flavor for up to 6 months. However, we recommend you consume it within the first 3 months to get the fullest flavor. After opening Genshu and Nama can be capped and refrigerated for another week. Nigori should be consumed in a few days once it is opened.
Sequoia Nama
NAMA
  • Versatile and lively, everyday drinking style, the Nama has nice impact on the palate but a smooth, round flavor reminiscent of pear and tangerine and other citrus fruits. Like the Deer, this sake is well- mannered and graceful. Works well with a variety of foods, such as seafood or pasta, never stealing the show but the perfect supporting cast.

  • Alcohol: 14-15%
Sequoia Genshu
GENSHU
  • Full-strength sake, luscious on the palate with dried fruits and hints of anise and spice on the finish. Nice for pairing with similarly spicy foods, e.g. curries or charcuterie. Roosters are brash and bold, like the Genshu sake which is undiluted, with higher alcohol content (17.5%) and a richer and deeper taste than the Nama.

Sequoia Nigori
NIGORI
  • This lightly cloudy Nigori has delicate aromas of lychee and apricot, reminiscent of spring flowers, a creamy, supple mouthfeel and a clean finish due to the use of more highly refined sake lees. The Bunny is soft and approachable, and this refreshing and utterly drinkable style Nigori strikes an excellent balance between sweet and dry. Try with strawberries other fresh fruit desserts.

Coastal Products

Coastal is our sake made specifically to travel. We have spent more than a year, perfecting just the right taste made for pasteurization. We bottle pasteurized at just the right moment to lock-in and maintain the best possible flavor. Coastal is ready to travel wherever you might go. Coastal creates a mood and atmosphere that is akin to setting amongst the majestic coastal redwood. Hence the name “Coastal”. The Coastal brand is meant to be enjoyed with friends! A sophisticated, rich sake made locally!

NOTES:

Coastal tastes great chilled or warmed. So, go ahead, drop them in an ice bucket. If you are a warm sake drinker then try warming up Coastal Genshu or Ginjo and taste what warm sake was meant to taste like, pure joy. Unopened Coastal will maintain its flavor if kept in a cool dark place for up to 18 months. However, we recommend you consume it within the first 6 months to get the fullest flavor. After opening Genshu and Ginjo can be capped and refrigerated for another week.

Sequoia Coastal Ginjo
GINJO
  • A calming, sweet aroma, yet dry on the palate, with a refreshing aroma of green apple. A refined taste that is complimented with a mild acidity. Works well with a variety of foods, such as seafood or pasta. Serve on ice for a picnic or warmed for those cold winter nights.

  • Alcohol: 14-15%
Sequoia Coastal Genshu
GENSHU
  • Rich, earthy, and full bodied, this junmai genshu holds nothing back it’s a flavorful sake. Nice for pairing with similarly spicy foods, e.g. curries or charcuterie. Serve chilled, just below room temperature will bring out the buttery texture or warmed to enhance its bold flavor.

Sequoia Coastal Nigori
NIGORI
  • Creamy sweetness of bananas and a slightly nutty flavor with a delicate floral aroma that is soft to the touch and delight to your palate.
